The microgreens FAQ.
Everything we get asked most — what we grow, how we grow it, how to order, and how to keep your greens at their best. Still curious? Reach out anytime.
What exactly are microgreens?
Microgreens are young vegetable and herb seedlings, harvested about one to three weeks after sprouting — just after their first leaves open. They carry a concentrated version of the full plant's flavor and nutrition in a tender, ready-to-eat green.
Are your microgreens organic?
Everything that touches our trays is organic — organic seed, an organic growing medium, organic nutrients, and clean well water. We grow to organic practices and call our greens "organically grown." We are a small producer and not USDA "certified organic," so we never use that exact phrase — but nothing synthetic goes into the rack.
What do you grow, and how do I know what's available?
Our rack rotates through crops like Red Russian kale, radish, broccoli, and pea shoots, with more in the wings. The live rack on our microgreens page shows what is growing right now and what is coming to harvest this week — you order straight off the shelf.
Where do you deliver?
Local delivery only for now. We are in Spring Grove, Illinois, and deliver around McHenry and Lake County — roughly a 15-to-25-mile radius depending on the size of the order. If you are nearby and not sure, just ask.
How do I place an order?
Pick what is growing on the rack, choose fresh-cut clamshells or a live tray, and send your request through our order form. We will confirm by email and arrange a local delivery time. We are taking orders this way while we finish building our checkout.
What's the difference between fresh-cut and a live tray?
Fresh-cut means we harvest the morning of delivery and pack the greens in a clamshell, ready in your fridge. A live tray comes still growing — you snip what you need at home for the longest possible freshness, and we swap or collect the tray on your next delivery so it comes back to us.
How do I store them, and how long do they last?
Keep them cold — a refrigerator crisper at about 35 to 40°F, in an airtight container with a dry paper towel to manage moisture, and out of the light. Do not wash them until you are ready to eat. Fresh-cut greens hold about 7 to 10 days (pea shoots often longer), and a live tray keeps growing for several extra days.
What kind of water do you use?
Well water — drawn straight from the ground and filtered through the earth itself. No fluoride, no chlorine, nothing recycled. It is one of the quiet reasons our greens taste clean.
What about the lights?
We grow under full-spectrum LED grow lights, tuned to a pink and pink-white spectrum that helps the greens grow sturdy and keeps their color true — so what you see on the rack is what lands on your plate.
Can restaurants, shops, or pet stores get samples or buy wholesale?
Yes. We already work with local chefs and shops, and we are happy to drop samples. Reach out through the contact form and tell us a little about what you are looking for.
